Meet the Chef

Patcharee (Pat) is our head chef and owner. Originally from Thailand, her love of cooking began at an early age, visiting the early morning markets in her home town of Pak Chong to buy the day’s fresh produce with her grandmother.

She moved to London in 1997 where she developed an expertise of European cuisine working in French restaurants and some of the iconic early gastro pubs including The Engineer in Primrose Hill and the Junction Tavern in Kentish Town. Throughout this time, she developed her own unique style, bringing Asian influences to traditional British cooking.

She then returned to her native Thai cuisine, taking on a residency at the Red Lion, Hoxton Square where she gained a strong following and great reviews from the Evening Standard and Time Out. This was followed by stints at Zuma in Knightsbridge, one of London’s finest exclusive Japanese restaurants and finally Great Queen Street restaurant (Covent Garden) where she also ran a series of highly successful Thai feast nights.

After moving out of London to Haywards Heath, Patcharee took on a restaurant in nearby Lindfield in 2013 where her passion for delivering flavourful food from fresh ingredients without compromise on quality has won her a strong local following. That ethos continues today where her broad experience of European, Japanese and Thai cuisines brings a unique approach characterized by a deep respect for traditional techniques and flavours, blended seamlessly with her own modern twist.
